The differences between a Helle knife and other knives are many. The main one is probably their use of a triple laminated steel blade. What they do is forge in a thin slice of hard steel between two tough stainless steel layers. As a result the blade is almost impossible to break while retaining its sharpness longer. The steel they use is more expensive than in many other knives, but that's all part of Helle's philosophy of never compromising on quality.
